I LOVE turkey dinner. My family used to eat turkey dinner often and since moving to the States, Brian and I have done Canadian Thanksgiving every year but this year (I just couldn't get into it being 30 something weeks pregnant). I missed it though! This is the recipe my mom has always used.
Stuffing (EASYish)
4 cups dry bread cubes (I like to use a mixture of white and brown, mostly white, though)
3 tbsp chopped white/yellow onion
1 tsp salt
1/4 tsp pepper
1/4 tsp poultry seasoning
1/4 tsp sage
1/3 cup melted margarine or butter
Hot broth or water to moisten (I just use water)
Cook onion in melted margarine until tender.
Combine dry bread cubes and seasonings in a large bowl.
Add margarine and onion to bread cubes.
Mix.
Add water to moisten.
Makes stuffing for a 5 lb chicken or turkey.
A few notes about this one. We usually 8 times the recipe for 20 people because it is always the first thing to go and left overs are always yummy! This is the BEST stuffing, I promise.
And I make my own bread cubes but you can buy them. The afternoon before I'm going to make this I freeze all of my bread if it isn't already frozen. Then, the night before I'm going to make this I cut my cubes out of the loaves and spread them out on cookie sheets all around my kitchen and tables. Freezing the bread makes it easier to cut. Then just leave the bread cubes out to dry all night and by morning they should have dried out. In Florida, just do the best you can, they have yet to go super dry for me but in Canada they dry right out. Oh, and I'm going to stick with store-bought bread for this as I have yet to find my homemade bread to be light enough for what I would want for this, but go ahead and try!
And when adding the water to moisten, add a bit at a time. You don't want the mixture too soggy or too dry. You may have to try this a few times before you get the hang of it. Or you can fly my dad to visit you as he is the official stuffing taster in the family :) I like to make mine a *bit* on the moist side as I can't stand dry stuffing. So as you are mixing this you need to taste it ever so often just to see if you are getting a good consistency out of it.

To combat the moisture my mom would leave the bread out all night and then toast them in the oven for color and to futher dry them out.
